My God I love this Cake!

Oh My Goodness! I love Smitten Kitchen.

When Smitten Kitchen posted this cake recipe a few weeks ago I KNEW that I would make it for my mom when she came to visit. It seemed like the perfect Key Lime Pie meets Cheesecake meets Cakes-Appropriate-for-Breakfast!
Since she and her boyfriend are visiting and were here for Mother's Day, I thought "ooo, what better day than Mother's Day"!

I even went out and bought a springform cake pan (finally! I've been wanting one).
But come Mother's Day we were busy playing tourists and had a nice but exhausting day.

Don't worry, on Mother's Day I still made our family's traditional Belgium waffle recipe with icecream and strawberry toppings for breakfast... but the cake didn't happen until today.
Holy Moly. It is divine.

I did edit the blackberry sauce by using half the water and then adding heavy whipping cream to taste. Nor did I drain the seeds. So rather than a running sauce, we had a thicker topping. Almost sorbet-ish.
Oh my. Did I mention how good it was?!

I think I just gained a few pounds drooling over the pictures of your cake! The recipe sounds delicious so I'm going to try it later in the week. I'm baking (it's in the oven right now) a Cream Cheese Chocolate Chip cake right now! When it's all been devoured I'll try this one. Can't go without my yummies!!

Wow. I do believe that my mouth is watering. I think a gluten-free recipe meeting needs to happen as soon as I come back FL. Yummmm....
