A sunset inspired dinner...

Tonight's dinner was inspired by the beautiful, beautiful sunset this evening. 

 I could see the sky turn glorious colors as I finished typing up my notes for the day at the office.

I quick ran outside to try to capture it. Unfortunately I missed the *perfect* time when the entire sky was full blaze. But I'm happy with what I did catch:

Then it was to the grocery store and on to home (*can I mention how nice it was to get home at a decent time tonight. An 8:30 - 5:30... almost the same hours as a typical job!)

This recipe was slightly modified from the one at Appetite for Adventure

Sunset inspired colors: Red cabbage, orange carrots, white daikon

Cloud inspired texture: Vietnamese spring roll wrappers

 Add some extra bright orange from bell peppers, and some pinkish patterned shrimp... 

all ingrediants inspired by tonight's sky.

and voila: a quick and easy dinner.
