I don't often eat a lot of dairy due to food sensitivities.
But every once in a while I just have to have it!
We grow our own tomatoes and basil.
Which means eating fresh mozzarella is a must!
And depending on how I'm serving it, sometimes I want the mozzarella grated.
Do you know how hard that is?!!!
Do you know it doesnt have to be so hard!
You can freeze it first - wrapped in plastic wrap - for about 20 minutes. Then grate it.
Genius!
And you can refrigerate the grated cheese for up to 5 days after.
